Ree Drummond has perfected a number of easy ice cream cakes that are semi-homemade or made completely with store-bought ingredients. The Pioneer Woman star has shared some of her favorite ice cream cakes over the years and there are a variety of ways to customize them to your tastes.
Ree Drummond shared her favorite frozen tiramisu cake
Drummond loves all things coffee, so it’s not surprising that one of her favorite frozen cake creations is a fun spin on a classic tiramisu dessert.
While making the frozen tiramisu cake during an episode of The Pioneer Woman show, Drummond explained that she’s a big fan of ice cream cakes because they’re so easy and versatile.
“Ice cream cakes are so great to have in the freezer,” Drummond explained. “I make them all the time. Sometimes I do round layers of cake, sometimes I do square. It’s so much fun because you can kind of take whatever angle you want.”
“Tiramisu happens to be my favorite dessert so I knew that would be a no-brainer,” she added.
The Pioneer Woman star found a way to make a favorite coffee dessert a snap, explaining, “For the cake part, you can make a homemade sponge cake — or you can take a nice shortcut and use a store-bought frozen pound cake.”
Drummond sliced the cake into layers and got to work assembling the delicious dessert. She started with a slice of cake in the bottom, added a drizzle of coffee liqueur, then spread softened coffee ice cream over it as well as a ground espresso bean and chocolate mixture. She repeated the layers using chocolate ice cream in one layer, coffee ice cream on the next, and vanilla ice cream on top. After a final sprinkle of the espresso bean and chocolate mixture, she covered the cake and put it in the freezer for four hours.

Ree Drummond created a traditional ice cream cake recipe you can customize
If coffee-flavored desserts aren’t your favorite, Drummond has more traditional ice cream cake options. One of her layered frozen cakes uses pound cake with layers of chocolate and vanilla ice cream, as well as sprinkles of chocolate candies in the layers and a chocolate sauce and candy topping.
Of course, the dessert can be completely customized with different ice cream flavors and whatever candy you’d like to sprinkle on the layers. Crumbled-up cookies or sprinkles make a great topping and give the dessert a fun twist.

‘The Pioneer Woman’ star makes individual ice cream cakes too
Drummond also has individual-sized ice cream cake snacks that can be easily stored in the freezer so they’re ready to grab. The best part? There are only 3 ingredients!
“They’re super easy to make,” she explained on The Pioneer Woman. “I just put 15 chocolate sandwich cookies into the bowl of a food processor and pulsed them until they were fine crumbs.”
After she added melted butter to the crumbs, she combined the ingredients then pressed the cookie crust into the bottom and up the sides of muffin tin cups. She placed the muffin tin in the freezer while she combined softened ice cream and broken cookies, then spooned the ice cream mixture into each muffin cup and topped it with more cookie crumbles.
Drummond placed the dessert in the freezer and, once set, removed each portion and placed them in a resealable plastic bag to store in the freezer.
